About Our Family Team

ChouxPieCo, short for Choux-maker, Pie-oneer and Co., is a Waterloo family bakery. Our founding Pastry Chef brings over 16 years of professional experience in Trinidad, blending Caribbean flavour with classic French pâtisserie. From currants rolls and coconut bake to signature choux and tarts, everything is made from scratch, and every recipe must earn the unanimous approval of our three sons before it reaches your table.

Frequently Asked Questions

Do your pies and tarts contain lard or gelatin?

No, we do not use lard or gelatin in any of our pies, tarts or other baked goods. We use butter in our pie and tart crusts.

Where can I buy your bakery goods?

You can find us at St Jacobs Market on October 10th, 17th and 24th, and then every Thursday and Saturday after that.


You can also pre-order for collection at our commercial kitchen on Mondays and Wednesdays, or the St Jacobs Market on Thursdays and Saturdays.


If you're in the Kitchener/Waterloo area, you can order for delivery.

We operate from a commercial kitchen in Waterloo, ON in compliance with Public Health and sell at St Jacobs Market in Waterloo.

Do you deliver?

We offer $15 delivery throughout Kitchen-Waterloo.

We offer delivery throughout the GTA for corporate gifting or catering orders. This cost is included when you request a quote.

We will be introducing delivery to Burlington, Hamilton and Toronto on select days shortly. Stay tuned!

Do your products contain gluten?

Yes, unless the production description specifically states that it is gluten free.

What is a Puff/Savoury Choux Bun?

In Trinidad, "puffs" are an essential bakery staple -Made from Choux pastry (not puff pastry as the name might imply), they are light, airy choux pastry buns filled with your choice of Trini seasoned tuna, chicken or cheese. Crisp on the outside, soft and savoury inside — a perfect grab-and-go bite, and a little taste of how we blend French technique with Trinidadian flavour.

What is Cocoa Tea?

Not just a great Kes song — it's a warm, spiced Trinidadian chocolate drink made from real cocoa, simmered with cinnamon, nutmeg, and milk. Rustic, comforting, and nothing like hot chocolate from a packet.

What is a Currants Roll?

The currants roll is a beloved staple of Trinidadian bakeries - flaky, buttery pastry rolled around a sweet, spiced currant (dried seedless raisin ) filling, then coiled and baked until golden. Think of it as a cross between a cinnamon roll and a hand pie — lightly sweet, warmly spiced, and perfect with a cup of tea or coffee.

What is Peanut Punch?

A rich, creamy Trinidadian classic beverage made from ground peanuts blended into a smooth, milky punch, lightly sweetened and spiced. Think elevated milkshake — thick, nutty, and satisfying.
